So I’m starting backwards… Finally found some time this afternoon to catch up on posting our week’s recipes. Please forgive me! *wink
Beginning this week, I’ve chosen recipes that made multiple servings. Enough for our family dinner and with left overs for a healthy lunch the next day for my hubby and I. I vowed to cut out processed foods and the “diet frozen meals,” or as we call them in Miami, “cajitas.”
Here’s the Monterey, or Monterrey, Jack Turkey Burgers from my Weight Watchers Complete Recipe Book (2007).
I have been using organic and natural ingredients in every recipe as I could to make them “cleaner” and healthier for my family. Learning to truly understand the ingredient list on product labels will help you indefinitely. But more on that in my next blog post.
INGREDIENTS: Makes 4 Servings
3 serving(s) Jennie O Extra Lean Ground Turkey, 3/4 pound
2 small uncooked shallot(s), finely chopped
1 serving(s) Publix Low Sodium Soy Sauce, 1 tbsp
1 serving(s) Heinz Simply Heinz Tomato Ketchup, 1 tbsp
1 clove(s) garlic clove (s), minced
¼ tsp black pepper, ground
2½ serving(s) Publix Monterey Jack Cheese, 1/3 cup, shredded
1 small fresh tomato(es), cut into 4 thick slices, one slice per burger
4 serving(s) Oscar Meyer turkey bacon, 4 slices, one per burger sandwhich
4 serving(s) Arnold’s Whole Wheat Thins, one roll per burger sandwich
1. In a large bowl, combine the turkey, shallots, soy sauce, ketchup, garlic and pepper. Blend in the cheese, then form into 4 burgers.
2. Cook burgers until cooked through and cook bacon strips until crisp separately.
3. Serve the burgers in the buns with the bacon and tomato.
One serving consists of one burger patty, one slice of bacon and one roll of the Whole Wheat rolls. 8 points plus in total. Condiments and different bread are extra points. Patty by itself is 4 points plus.
For dinner, I served the turkey burgers as described above and added a handful of mixed baby greens and spinach. Add a dill pickle for an extra veggie side and I used Heinz Simply Heinz all natural ketchup. Very tasty!
“Take 2” Lunch today, I grilled the left over turkey patty and had it with mixed baby greens, spinach, cucumber, tomato and 2 tbsp of a delicious find: Bolthouse Salsa Ranch. My new dressings by choice! They’re yogurt based and all natural, plus, no sugar added. 6 points plus for entire lunch, includes this dressing.
