Mexican food is delicious. But it also can be heavy on the waist line if you stick to the cheesy and fried meals. Here is an easy and lighter take on a favorite… Burritos. Slow cooked, how wonderful!
This is a big recipe! Wonderful for entertaining on game night. This recipe will make 12 burritos and depending on what tortilla you use, it will be more points.
What’s new: I used multigrain tortillas- whole wheat is another option, and low sodium organic ingredients within the recipe. To serve, I added fresh grape tomatoes, snipped cilantro and spooned a tbsp of reduced fat sour cream before folding the burrito closed. Only the reduced fat sour cream has 1 additional point.
“Take #2” of this recipe- with so many left over’s, add salsa and reduced fat Mexican cheese to the chicken and bean filling. Serve with organic low sodium blue corn tortilla chips and you’ve got a light and satisfying appetizer on movie night or to watch the game. My husband loved the “Take #2” just as much as the burritos. Touch down!

INGREDIENTS: Big recipe- makes 12 burritos.
2 clove(s) garlic clove (s), minced
1 small uncooked red onion (s), chopped
½ tsp chili powder
½ tsp table salt
¼ tsp dried oregano, crushed
¼ tsp black pepper
1 pound(s) uncooked boneless, skinless chicken thigh(s), cut into bite-size pieces
12 serving(s) ^La Banderita Multigrain Flour Tortillas, 12 tortillas
3 serving(s) Sargento reduced fat 4 cheese Mexican shredded, 3/4 cup, 1 tbsp per burrito
¾ serving(s) ^Swanson Organic 100% Natural Chicken Broth, 3/4 cup
3½ serving(s) ^GreenWise Organic Diced Tomatoes, one can
3½ serving(s) ^Publix GreenWise Organic Lo Sodium Red Kidney Beans, one can, rinsed and drained
1. Place garlic, onion , tomatoes, beans, chili powder, salt, oregano and pepper in a 3-quart slow cooker; stir well. Add chicken and broth. Cover and cook on low setting for ◴ 7 hours*; drain off liquid (there should be about 6 cups of burrito mixture).
2. To serve, spoon about 1/2 cup of burrito mixture down center of each tortilla; top with 1 tablespoon of cheese. Fold bottom 1/3 of tortilla to center. Fold left side to center; fold right side to center, covering filling. Repeat with remaining ingredients.
1 burrito per serving according to the above mentioned measure of chicken/bean and cheese filling to be used.

* I use a 5 quart Crock-Pot® Smart-Pot Slow Cooker for all slow cooker recipes. Adjust by reducing the cook time by 1/3 for smaller slow cookers.
